Spinach/Broccoli Quiche

Ingredients:

3 eggs, slightly beaten
3 slices slab bacon, chopped
1 cup frozen chopped spinach, thawed and drained
1/2 finely chopped broccoli florets
1/2 cup white or yellow onion, chopped
1 1/2 cups grated Monterey Jack or Cheddar cheese
2/3 cup skim milk
1 tablespoon Worcester sauce
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon nutmeg
1 pie crust

Instructions:

In large bowl, mix all ingredients together and pour into a pie crust (I sometimes use Pillsbury brand). Bake at 425 degrees for 15 minutes then turn oven to 375 degrees and bake quiche for an additional 40 minutes or until knife inserted in the middle comes out clean.  Also, cover crust to prevent burning.

Let quiche rest for 10 minutes before serving.

Super Easy Barbecue Chicken

Ingredients:

1/2 Chicken
1 tsp. garlic powder
1 tsp. black pepper
1 Cup Bullseye Barbecue Sauce

Instructions:

Sprinkle both sides of chicken with garlic powder and black pepper.  Put in an oven safe dish.  Pour barbecue sauce over chicken and cover tightly.  (I use a corning-ware dish).  Bake at 400 degrees for 1 hour to 1 hour and 10 minutes.

Fried Bananas w/Honey and Toasted Coconut

Ingredients:

2 Firm ripe bananas
1 Sheet frozen puff pastry (thawed)
1 Tbsp honey
1/2 Cup sweetened toasted coconut flakes
Vegetable/Canola oil (I used about 1 1/2 liters in my deep fryer)

Instructions:


Preheat oil in deep fryer to 350 degrees.  Roll out thawed puff pastry to about 1/8 inch in thickness.  Cut puff pastry with sharp knife into about 4x4 inch squares.  Cut bananas in half lengthwise and then into 3 inch segments.  Place a piece of banana in each of the puff pastry squares.  Fold the puff pastry over the banana making sure that the entire piece of banana is covered.  Pinch the sides of the puff pastry together, creating a tight seal around the banana.  Cook in the deep fryer 5-7 minutes or until golden brown.  Drizzle with honey and top with toasted coconut.  Serve warm.

*To toast coconut:  Preheat oven to 375 degrees.  Place thin layer of coconut on cookie sheet.  Bake about 2-3 minutes or until golden brown.

*Fried bananas can also be served with a scoop of vanilla ice cream on the side.

Easy Zucchini Bread

Ingredients:

1 1/2 cups flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp ground nutmeg

Sift above ingredients into a small bowl.

In a large bowl, mix

1 cup sugar
1 cup finely shredded zucchini, unpeeled (medium size)
1 small carrot (finely shredded)
1/4 cup cooking oil
1 egg

Instructions:

Preheat oven 350 degrees.  Add flour mixture to sugar mixture and stir until just combined.  Pour batter into a greased (I use canola spray) 8x4 loaf pan and bake for 45-50 minutes or until toothpick inserted in the middle comes out clean.

Cheesy Sausage Biscuits


Ingredients:

1 cup ground sausage
2 1/2 cups Bisquick mix
1 cup shredded monterey jack cheese
2-4 oz diced green chiles (optional)
2/3 cup milk


Instructions:

Preheat oven to 450 degrees. In a bowl, mix sausage, bisquick, 3/4 cup cheese, green chiles, and milk together until well incorporated. Hands are the best tool for this. Once dough comes together, roll out dough to a 1/2 inch thick. Cut into pieces, sprinkle remaining cheese on tops, then bake in the oven for 8-10 minutes.


Makes approximately 16-20 biscuits
